The days are getting shorter and the nights have a chill in the air, which tells me fall is near. Savor the last flavors of summer before it’s gone with this zucchini pasta and pesto. This dish is so fresh and easy, especially if you already have the pesto ready to go! I took this dish to a potluck recently, and it was a hit! It would be great as a side, or serve a heftier portion as a main dish.
Raw Zucchini Pasta with Pesto and Sun-Dried Tomatoes
serves 2 as a main dish, or 4 as a side
Ingredients:
3 large zucchini
3-4 tbsp pesto (see recipe)
5 sun-dried tomatoes, chopped
a handful of cherry tomatoes, halved
Directions:
Spiralize your zucchini or use a julienne peeler by running it along the zucchini lengthwise, rotate and peel until you get to the seeds. (Save middle of zucchini for another dish. We used ours in a stir fry the next day.) Toss noodles in large bowl with pesto. Use your hands… don’t be afraid to get messy! Then add chopped sun dried tomatoes, cherry tomatoes, and toss. Serve immediately, or store in fridge for up to a day.
